Fresh vs. Frozen

Did you know that frozen seafood may be better than fresh? 

Fresh seafood is always better than frozen, right? WRONG. Nowadays, modern freezing capabilities are making fish in the freezer aisle superior to fish in the fresh fish case. Why you may ask? Because many fish are now frozen on the boat immediately after being caught using flash-freezing units that can obtain temperatures far below a typical home freezer. By freezing the fish at such low temperatures right after being caught, the quality characteristics of the fish are preserved immediately. Surprisingly, many "fresh" fish are previously frozen, and while many state this on the label, there are still numerous fish items that leave this mention out.
