Recipe Contest Winner: Grilled Bluefish in Citrus Marinade

The winning recipe was submitted by Gloria Bakst who is a personal wellness chef who helps people cook more healthy meals.  She knows a lot about seafood and has created many delicious seafood recipes which you can check out on her web site.   Gloria sent us a fabulous Grilled Bluefish recipe which works well with any oily fish like salmon, tuna, or striped bass 

She tells us that some people don't like bluefish because it can taste too fishy.  Her marinade helps take away any fishy taste. 

Grilled Bluefish in Citrus Marinade

Ingredients:

Juice of ½ lemon, 1 lime and 1 orange

2 cloves garlic finely chopped

6-10 drops hot sauce (add to your heat preference)

3 scallions chopped

2 Tablespoons dry vermouth

Add 2 tsp olive oil if marinating salmon or variety other than bluefish

2 pounds bluefish  (salmon, striped bass, tuna also work well)

Preparation and Cooking Instructions:

Mix all ingredients together and pour over fish in a non-reactive dish.  Allow to marinate for 1 to 3 hours.  Drain marinade and put in small pan and heat until boiling and then simmer.   Preheat grill until very hot.  Grill bluefish skin side up for about 4-5 minutes and turn over and grill for another 4-5 minutes, depending on the thickness of the fish.  Remove from grill.  Pour heated marinade over the fish and serve.
